Christmas Yumminess: Almond Toast
Thanksgiving is over and the season for celebrating Christmas is here!
Although I know Christmas isn’t so much about what we do as it is about
Who we celebrate, you can’t deny that all of the sights, smells, and
traditions have become a part of how we celebrate Christ’s birth.
Over the next few weeks, I’d like to share several more special recipes that, around here, are only for Christmas. Last year I shared my family’s all-time favorite recipes for Peppernuts and Home-made Summer Sausage (If you’ve never tried homemade summer sausage, you don’t know what you’re missing out on! I grew up on this stuff, and it has kind of {really} spoiled me.)
This year I’ll try to post the recipes for Almond Toast, Grandma Lehrman’s Christmas Cheese Ball (it’s the best cheese ball I’ve ever had!)and Homemade Zippy Mustard to go with the Summer Sausage (which makes the summer sausage burst with amazing flavor!)
Almond Toast
This stuff is yummy on its own…or on a plate-full of other goodies {because it’s not so super-sweet like so many Christmas goodies are}…or with a cup of coffee in the morning. You can eat it fresh out of the oven or store a batch of it in the freezer to take out a piece at a time {to savor over some coffee while you sit next to your sweetheart and “be all in looove” {as Isaac calls it} while you watch the blazing fire in the woodstove.}
Anyway…here it is! Make a whole batch—you won’t be sorry!
2 c. sugar
1 c. butter
1 c. sour cream
2 eggs
1 t. baking soda
1/4 t. salt
2 t. almond extract
4 c. flour
Mix together all the ingredients.
Pour into 2 loaf pans, floured and greased.
Bake 1 hour @ 350 or until a toothpick comes out clean.
Let sit overnight.
Slice the loaves. Place slices lying down, single-layer, on an ungreased cookie sheet.
Bake at 350 for 10 minutes; flip the pieces over and bake another 6-8 minutes on the second side. Keep a close eye on them the second time around so they don’t burn. This second baking is just to make it crispy…like a cookie of sorts.
When you first take them out of the oven, they might not seem very crispy, but once the slices are cooled, they will be crunchy, and oh, so yummily addicting. Good thing Christmas only comes around once a year!
